Since I’ve started making my own veggie stock with my vegetable scraps, my freezer seems to be overflowing with jars of veggie stock. So much so, that I stopped collecting scraps for a week or so.. there was just to much veggie stock – and I didn’t want to eat soup for every single meal!
So, what are some other things you can do with veggie stock you may ask? Well, I’ve been experimenting and here is what I’ve done so far:
- Cook your rice and quinoa in it: use the same ratio as water to rice, and it adds more flavour!
- Cook PASTA in veggie stock: this was a game changer for me. I cooked rice pasta in veggie stock last night, and it was SO yummy!
- Fry veggies in it: I’ve started pouring a bit of veggie stock into the vegetables I fry, and again, it adds more flavour. All the liquid burns off or gets absorbed, so you don’t end up with a soupy pan of veggies (start with a little bit of stock at a time, and add more if you want)

Since it is quite inconvenient to unfreeze a big jar of stock every time you are cooking rice/pasta/frying veggies, I’ve started keeping a jar in the fridge, so I always have some unfrozen stock to use.
